Serves 2-3
Ingredients:
1 Tbsp. vegetable oil
1 c. rice
1 onion, diced
2 cloves of garlic, minced
4 oz. green chiles, diced
8 oz. tomato sauce, low sodium
1 c. water or chicken stock
1/4 c. fresh cilantro
2 tsp. vegeta
1/2 tsp. black pepper
1/4 tsp. cayenne pepper
1/4 tsp. cumin
1/4 tsp. oregano
Directions:
1. Heat the oil in a medium saucepan on medium-high. Add rice and toast for 15 minutes.
2. Add onions, garlic, green chiles and saute for 5 minutes.
3. Add the rest of the ingredients and bring to a boil. Cover and simmer for 40 minutes or until the rice is fully cooked.
