Chocolate PB Fiber & Protein Bar

OK, I thought I would try to make a fiber bar myself instead of buying them at the store. 

My ingredients were limited because I didn't plan ahead and this was just on a whim.

I really liked the taste of the bars but am sad that there was so much sugar in them. (mostly due to the high sugar in the cereal)

I originally made the recipe with 1/2c. of peanut butter but I think 1/4c. would be enough. 

Adding some other things like coconuts, dried fruit, chocolate chips, etc. would be a great addition as well. 

I do think that I will be looking for another recipe that doesn't use the cereal for the fiber content, which will in turn cut the sugar. 

Also I cut the recipe into 6 bars but I had a hard time  finishing 1 bar because I felt full. I think these could be make into 8 bars. 

Serves 6

Ingredients:

1 1/4 c. Fiber One cereal (I used the almond crunch one)
1/2 c. oats
1/4 c. peanut butter
1/4 c. honey
1 1/2 scoops chocolate protein
1-2 Tbsp. of water if needed

Directions:

In a small saucepan: Heat honey and peanut butter. Stir well to combine. Add protein powder and combine. If the mixture is too thick add 1-2 Tbsp. of water. 

In a medium bowl combine oats and cereal. Slightly crush the cereal to break up the larger pieces. 

Pour the peanut butter mixture over the cereal and oats. Mix well. Press into an 8x8 pan lined with parchment paper. 

Refrigerate until set. Cut into 6 bars (or more).
